Pineapple Fried Rice

    Here is a recipe that could be a side for a potluck, or a main dish for a camp.
    Ingredients:
    1 C uncooked rice (cook and chill)
    2 Tb sesame oil
    1 can pineapple chunks (drained)
    1C cubed ham (small salad size)
    1Tb minced garlic
    6 green onions chopped (greens and all)
    1 egg (beaten)
    1 Tb white sugar
    1C Peas (I used snow pea pods)
    Soy sauce to taste


    In a skillet or a 10" DO, heat oil, add ham, onions, garlic.
    Stir fry until onions are tender.
    Add pineapple stir fry until starting to turn brown.
    Move mixture to side of pan, add egg and stir to prevent sticking. When egg is cooked, mix into meat mixture. Add pea pods and stir until a bright dark green. Sprinkle sugar on rice and add to pan. Add soy sauce and stir to combine and get rice hot. Plate it and eat it.

    This very easy to make when camping, as rice can be cooked prior to leaving home and kept in cooler. The ham can be purcheased already diced, goes good on salads as well.
