Just got back from our 3 week road trip... hit a bunch of national parks... Lassen, Great Basin, Canyonlands, Mesa Verde, Chaco Canyon, Canyon de Chelly, Lake Meade, Death Valley, and home again (and some places in-between). Need to provide pictures and other details.
Quick tip: Don't leave any spare water in the teapot on top of the cabinet when leaving Chaco Canyon on the southern exit.... 20 mile dirt road so incredibly bumpy that all water exited the teapot and soaked everything else. My sister's coleman tent camper lost some parts on the sink and the front paneling nearly fell off completely, but water was all I lost on the CI.

Sounds like you know how to break one in. I don't think ours has seen 20 miles of dirt road in 20,000 miles! There can be a lot of action in the galley, so we pack tight and lock the cast iron down.
We kept the 1 gal. Coleman water jug in the sink until we found out it beat the water spigot to death.
Hopefully it was fun getting a handle on the 560.

I found that the package of chammies that I bought was used mainly for packing the cast-iron among other heavy things.... good to have quite a few dish-towelish things to be used as "moving rugs".
That was 20 miles in and 20 miles back out, and the south exit 20 miles out was as rough a road as I'd never like to see again.
I learned a few other things on the trip:
- show the wife how to take down the bunk before she tries it on her own (first nick in the wood)
- Look out for sharp bits on stuff on top of the galley and cover with cloth... will abrade the paneling.
- Teach your kids how the table legs work. You may avoid bending the metal, but if you don't show, they'll play with it and bend it (similar to the bed thing).
- rolled over a plastic chock when we decided in mid-start camp to move to a different site. Not sure how to complete the routine when the routine was barely started. At least I remembered to retract and turn up the front hard plastic wheel.
In all, the glitches were minor and the trip was excellent.
