I love cooking in ci. Probably 75% of our meals involve ci cooking and I own a half dozen Griswold ci waffle irons. However, camping with a CI requires some thoughtful balancing and common sense.
When camping, we normally cook for two or four if we want leftovers for another meal or have company for dinner. We always have a #10 ci frying pan as it will cook any recipe for one or 6. We will take our #8 - 5 qt. Dutch oven IF it is appropriate. It will hold dinner for 6 also no matter what recipe. A Coleman collapsible oven for baking always goes with us for any baking. I’ve found using inches can be deceptive so I use the utensil numbers. An example of the deception is now Lodge is selling a 14sk that is really a #12 but is 15”s in diameter. Historically the # of the pot or pan was the diameter of the cooking surface
A 12” Dutch oven should be a #10 which would hold enough for at least 8 people. Way too big for CI cooking for 2. I don’t recommend one that big unless you need to cook for that many people. Both our #8 and #10 are Lodge as they cook more evenly than Griswold, Wagner or any other high end crap out there. Those and my Belgium Descoware 2 egg pan are the limit for ci going camping. The waffle irons stay home to wait for our arrival.
Your menu can decide what ci you need, or vice versa.
