Sausage and Cabbage

This Sausage and Cabbage dish is one of my family's favorites.

1 head of cabbage choopped bit size
2 lb smoked sausage cubed (turkey for those wanting a healthier dish)
4-6 green onions chopped
salt (to taste)
Coarse black pepper (enough to see)
cayenne pepper (ground) ( just a little will suit most people)
2-3 tablespoons olive oil or canola oil

Oil the DO. Cook the sausage until slightly brown over 10=12 coals. Add other ingredients and stir. Cover and ring the lid with coals. Lift the lid and stir until cabbage is wilted with a slight crunch remaining. This dish will cook in 15-18 minutes. It will go very well with some of the corn bread recipes listed here.
