Smoked/Q'd Bologna

Yup Bologna! Try it b4 you turn up your nose. If you don't carry a portable grill, it could be done in a Dutch Oven as well.

This is best done with a 3# chub of bologna.

Ingredients:
3# chub bologna
bottle of favorite BBG sauce
(I like Jack Daniels)
Also a rub of your choice
2Tbs of olive oil, or wrap it with BACON

Get a CLEANpiece of 1" or 3/4" piece of PVC water pipe (about 8" long)
sharpen one end. You will only need to make this tool once, then you have it.
Take the pvc pipe and run it thru one end of the chub (bologna)don't go all the way thru to other end, Remove core that you have cut. Stand chub on end and pour in BBQ sauce to about 1to 11/2" from end. Shorten cored piece of meat to about 1". Replace the piece of core in hole and pin in place wit tooth picks.
Put on the olive oil, and rub. wrap with bacon(optional)
Wrap meat in foil and the place in cooking oven. Grill or DO. If you grill it is easier to add a smoke. Those of use with Volcanos or Cobbs can do this.
Let cook for about 3 hours @ 250 deg
Remove from heat if you wrapped bacon, you will want to return to grill to crisp up bacon.

That's pretty much what it is, Jean.

My dad used to fry bologna. Loved it. I never could see it, myself.

He also loved banana and mayo sandwiches.

Most of your supermarkets have unsliced bologna. You can get them ranging from 3 to 5 pounds. Yes it is a bolgna roast. It is really good.
